In this cheese dairy, all the procedures for obtaining the organic certification are followed when producing this cheese. The whole cheese production process is certified, starting by the organic farming .
This cheese holds the silver medal at the World Cheese Awards strong> 2010. A soft cheese which blends a hint of wine flavor to the characteristic taste of the goat cheese.
It has a thin, smooth red rind and an ivory white interior paste. It's highly soluble in the mouth and its taste is slightly sweet with red wine aromas.
