Alcaidus cheese factory located in the town of Alaior in Minorca manufactures high quality artisanal cheeses on their farm. The milk comes from their own herd of Friesian cows.
Their cheese has a hard texture and a consistency corresponding to how it's cured.
It has the intense, delicious and biting taste typical of the cured artisanal cheeses.
