It is made with uncooked sheep milk which provides extra flavor and has a very limited production. It won the gold medal at the 2013 edition of the World Cheese Awards.

Pata de mulo

The cheese pata de mulo, also known as Villalón cheese, from where it originates, is a cheese that gathers cheese tradition of Tierra de Campos, a typical shepherding place, preserving the traditional way in the production of these cheeses.

The cheese factory Los Payuelos has repeatedly been awarded at the World Cheese Awards for its Patas de Mulo. A renowned cheese that is liked both nationally and internationally. Their cheeses are produced with their own livestock's milk which has recently been ordered to go directly into a tank, thus guaranteeing curdled, unmatched quality.
