Cheese made by the fromagerie La Antigua, under its Campoestrella brand, starting from sheep's raw milk, matured in hold a minimum of 12 months, during which it gets a very important evolution in their aromas and flavors. This product is selected for cutting and tuned in Virgin olive oil, for a minimum period of 4 months, during which it acquires organoleptic characteristics.
The paste is firm and compact and the color is ivory beige. Their paste is a characteristic of these types of ripened cheeses, hard. It has a delicate aroma, hay and natural herbs, thus enhancing the set of odors. The aftertaste is persistent and marked by a very good softness with a pleasant spicy aftertaste typical of the olive oil.
Serve in wedges 250 gr. approximately.

They make all their cheeses from sheep's raw milk, being the result of our development process some cheese with its own personality.
