It is produced in an artisanal manner using the traditional volcano-shaped Maestrazgo mould. It weighs about 400 grams. It has a very pleasant aftertaste, showing average persistence. It matures over a period of time between 30 to 60 days. A delightful cheese aromatized with rosemary.
