The La Chivita cheese factory began its path when, in 1982, a young couple decided to enjoy the beauty and quiet of the countryside in a small Asturian village named Buelles. They started with a small herd of goats and since the very beginning they endeavored to achieve excellence succeeding in crafting a truly amazing product .
Today they can rely on 250 goats belonging to the breed of Murcia-Granada, and produce three different types of cheese crafted with raw milk in an artisanal way.
The La Civita Goat Cheese, which we offer here, is made of pressed paste and is matured for over 2 months. Cylindrical shaped and approximately 500 grams. Its rind is rough and a little moldy, due to the penicillium roqueforti, and of a bluish-green color. The cut surface is white and homogeneous, just as in every goat cheese. The texture is flexible and slightly moist. It has a lactic aroma with a clear touch of caprine milk taste on the palate. It is a well-balanced cheese with an intense aftertaste. IT is slightly spicy.
