It is a blue cheese made from goat's milk, internally moldy, made from pasteurized goat's milk, with the specific Penicillium roqueforti mold. Its paste is semi creamy, white in color and with the typical green traces with grayish tones produced by mold. It is relatively soft although it maintains the character of goat's milk and penicillium roqueforti.
You can buy this cheese in wedges of 100 grams in a controlled atmosphere container.
Being creamy, the container may contain some serum.
