Valdeón blue is a blue cheese, made all year round with cow's milk and goat's milk. It is of long maturation, until reaching the point between semi-cured and cured. The paste has a soft texture and pale yellow color, full of small cavities where a white and greenish-blue mold is concentrated.
Its flavor is strong, somewhat spicy, fatty and buttery on the palate, it is very aromatic. It is recommended to use it for spreading and it is perfect to prepare any variant of blue cheese sauce.
For the preparation of the cream, the cheese itself is used, to which are added flux salts to achieve the appropriate spreadable texture. No cream is used. You can buy this cream cheese in jars of 200 grams.
