Artisan cheese of very limited production that is elaborated in the Council of Tineo in the central Asturian area. Cow's milk (75%) is joined by goat's milk (25%) to obtain a cheese of intense character and flavor characteristic of Asturian blue cheeses. Its bark is moldy and irregular and presents, in its paste, an extensive greenish blue pigmentation. Its shape is peculiar breaking with the typical round format of blue cheeses. It is a very versatile cheese either for direct consumption or for use in the kitchen. You can buy this cheese in pieces of 500 grams.
