The Picón artisan cheese is made by the Monje cheese factory for over one hundred years. It is a blue cheese made with raw cattle milk that grazes by the Asturian Council of Peñamellera Alta. It is of compact mass although with its characteristic holes for the proliferation of fungi of the penincilium that gives it that greenish color, this process develops during the three months of maturation in the cellars of the old house of mountain type with high humidity and constant temperature of 12 ° C. It has a creamy to semi-hard consistency, yellow with "blue" vein, cylindrical shape and soft crust, so it is packed with special aluminum foil. You can buy this cheese in units of approximately 850 grams.
