Its orange color that could be reminiscent of English cheeses in which achiote is used is obviously due to the paprika. When cutting, the presence of the penicillium fungus is perceived. When cut, it is somewhat brittle although it retains some moisture. In its aroma, the paprika and aromas of humidity and cellar stand out. And the smell comes old butter and paprika in the first line, on a background of mushrooms and cellar. Its flavor is strong and spicy with a long aftertaste.
