Los Balanchares cheese factory makes this cheese in the Cordoba town of Zuheros with pasteurized milk from cabar. It is a soft-paste goat cheese, acid coagulation, semi-cured, about 15 days of maturation, and another 15 days in extra virgin olive oil, with spices. The milk with which they make their cheeses comes from organic farming located in the Natural Park of the Sierra Subbética in Zuheros.
