Páramo de Guzmán is a churra cured sheep cheese, one hundred percent artisanal and very exclusive, which is made when Castilian pastures have a higher concentration of aromatic herbs. It undergoes a curing process of at least one year. Subsequently, the cheese is canned in EVOO (Extra Virgin Olive Oil), a 100% Picual variety.
The artisanal method and the quality of the raw material result in a cheese with a resounding and pleasant flavor that takes us to the Castilian plateau.
In 2000, the American writer Michael Paterniti called it "the best cheese in the world." Under this label, he made him the protagonist of his best seller The Telling Room, a story of tradition, family and craftsmanship that was born when Paterniti fell in love with Castilian cheese.
You can buy this cheese in cans of 250 grams of cheese in extra virgin olive oil.
