Westcombe Cheddar is a flagship product of one of the most famous cheese probers in the United Kingdom. They still make these cheese in the same traditional way that the original creator, Mrs. Brickell did more than 100 years ago.
The cheese is produced with fresh, raw Holstein and Frisona cow's milk which arrives daily to the creamery for the day's cheese production. The entire process is manual and the cheese matures for a period of 11 to 18 months.
The flavor of this Cheddar is complex and very far from what most of us know as mass produced Industrial cheddar. It has fine lactic favors that are long lasting on the palette. The flavor is accentuated with citrus notes, hazelnuts and caramel.
A cheese that is really worth trying.
