This cheese is produced in the ancestral way in the French area of the high Pyrenees. The name comes from the Pic du Midi d'Ossau that dominates the Ossau valley and the Irati forest.
It is a cheese that is ripened between 4 and 6 months. Its rind is orange yellow and straw inside.
The sheep graze freely in the Pyrenees and produce milk from November to July which makes the cheese seasonal and exclusive.
Since 1980 it has been recognized with the Protected Designation of Origin.
