This specialty cheese is named after the town located 65 km north east of Dijon, Langres. This city in the Middle Ages was an important commercial enclave thus helping the marketing of these cheeses farm.
This cheese never turns during the ripening so at ends have a crush on top. It is in this part where it is include port wine getting a surprising result. The Langres is washed with achiote which gives this so characteristic orange color.
