Raw cow's milk cheese that is washed by hand on a regular basis with brandy and brine with Brevibacterium linens. This wash gives the characteristic orange tile color. The cheese comes packed in a special paper and a wooden box. You can buy this cheese in units of 250 grams.

Legend says that the monks created this cheese in the sixteenth century in the town of Epoisses. The recipe was based on the first washed bark cheese created in the abbey of Maroilles, in Thierache, in the north of France, around the year 960.
The monks of Epoisses, taking advantage of the proximity to the magnificent vineyards of Burgundy, decided to wash the cheese in a strong brandy of the region, Marc, which infers a characteristic whiff and creates a hard, sticky and orange rind.
