Legend says that the monks created this cheese in the sixteenth century in the town of Epoisses. The recipe was based on the first washed bark cheese created in the abbey of Maroilles, in Thierache, in the north of France, around the year 960.
The monks of Epoisses, taking advantage of the proximity to the magnificent vineyards of Burgundy, decided to wash the cheese in a strong brandy of the region, Marc, which infers a characteristic whiff and creates a hard, sticky and orange rind.
