Its original name is formatge de tovallò, literally scarf or cloth cheese, which describes the way it gets molded and the distinctive shape it develops. This mold is none other than a cloth that gives the curd its unique shape when it gets wrapped by it.
A layer of gray mold gives it a ripe, distinct flavor. It gets aged for 30 days and features a firm, semi-soft texture. It releases a humid smell from its moldy crust, while its interiors release a dairy aroma with hints of sweet grains. This cheese features a balanced salty, yet slightly sweet taste. It has various and interesting nuances if it is consumed with its crust. It has been prized at the World Cheese Awards and countless national conferments.
