The Afuega'l Pitu is a spanish semi-hard cheese, with a firm, compact, and smooth consistency. Made in Grado, Cornellana, Salas and Previa, with cow's milk. It has a somewhat persistent aftertaste.
The name Afuega'l Pitu has various interpretations, the most accepted being that it relates to the characteristics that were also present in its origins. This is based upon being consumed when it was aged (due to its fat content, since the herd from which the milk came from were cows, of small production but high in fat content), it caused a blockage in the throat or zone of Pitu (in Asturias, the pharynx is called "pitu" in colloquial language ) faithfully complying with its name.
