The origin of Gouda cheese has been known since the sixteenth century and the name was produced in the farms near the small town of Gouda, in Holland. It is a cheese with two versions, the Gouda Kaas and Gouda boeren Kass; the first case is produced with pasteurized milk and the second raw milk (called Farm).
Gouda is a cheese that stands out for the versatility of the spices used in the preparation of their specialties. Thus, in addition to the truffled Gouda, we can find Gouda pesto with cumin, with walnuts, etc.
What sets Gouda a part from other cheeses is a part of the serum is replaced by hot water in the tub, after cutting the curd. This process is called "washing the curd." Thus, lactose from the curd is removed and a sweeter, milder, and more elastic curd is obtained.
The truffled Gouda cheese is produced from raw milk of Friesian cow and truffle. Its color is intense, hard and brittle with clear presence of yellow truffles. The feeling in your mouth is aromatic, lush, and smooth.
