Cheese of great tradition that is made with pasteurized cow's milk. It matures for about 8 months on wooden shelves and ensuring strict temperature and humidity conditions that vary as the curing process progresses. In this way an old cheese is obtained but very creamy and easy to cut. A classic netherland cheese with a medium and characteristic flavor with a very pleasant aroma.

During the 1980s, the horizon of the traditional Dutch cheese landscape gradually began to show some diversity. Cheeses with a lot of flavor gained popularity. Unfortunately for cheese lovers, at that time the quality of aged cheese varied considerably. Often the aged cheese would crumble and the crust was so hard that after cutting it was common to have to discard the crumbs. For this reason, in 1985 the Westland family was inspired to elaborate an old cheese, with crystals, with a soft structure on the palate, but easy to cut. Thanks to the experience gained after a few years selling cheese from door to door, the family knew exactly what characteristics a cheese had to have to be popular. They were looking for a cheese that breathed Amsterdam: with its own character and pronounced. A cheese that stands out from the rest. They visited Europe acquiring the knowledge of elaboration and maturation necessary to obtain this cheese.
