Grana Padano, one of the most famous cheeses of Italy that has protected designation of origin since 1951.
It was created in the twelfth century when the Cistercian monks of Clairvaux wanted to preserve excess milk.
Its name refers to its distinctive grainy texture with grana term "grain" and the adjective Padano, which refers to the area of the river Po, which is where it is produced.
Is made from curdled milk cow from two milkings, later milk is skimmed, and aged 12 to 36 months, the result is a cheese fine and intense flavor, of grainy texture, hard or extra hard paste depending on the maturation few eyes, consistent color straw inside and bright yellow in the bark.
This grainy is produced on wheels 24 to 40 kgs, cylindrical with convex sides and flat faces.
