Goat's milk is very difficult to obtain in the commercial circuits that most of us have within reach. In Al Queso we incorporate this product to solve this commercial lack and to offer it to our cheese-makers. It comes from fresh whole milk that is pasteurized and then dehydrated to make it into powder. With 125 grams of milk powder you get one liter of milk. You can buy goat's milk powder in bags of 375 grs

The procedure for rehydrating goat's milk powder is simple. We take water previously boiled and when it is at a temperature of 40° - 50°C we sprinkle the milk powder and stirring carefully avoiding the appearance of clumps.
Milk powder needs a minimum of 15 to 20 minutes to rehydrate and to minimize any sandy sensation. It is advisable, but not strictly necessary, to let the hydrated milk rest in the refrigerator overnight to ensure its complete hydration.
