Mature Payoyo goat cheese

Payoyo cheese is made with milk produced by farmers in the natural parks of Sierra de Cadiz. The Payoya goat is one of the special protected animals in danger of extinction. Without the activities of producing cheese with their milk, this special and appreciated breed would have probably disappeared.
