This cheese is produced from raw Payoya goat's milk, which responds to the tradition in Spain that supplies these cheeses and stands out because of the potency of their flavor. In the Spanish geography, we come across the cheeses of rosemary, ash, in oil, wine, herbs, truffles, etc. The tradition has special popularity within the Andalusian cheese shops with very interesting preparations that are created in the artisan cheese shop of El Bosqueño: plastered (the oil and bran of wheat), with Arrayán liquor or the preparation that we present with oil and paprika. The packaging of the empty quarters of cheese makes the flavor of the paprika very pronounced.
