This aged goat cheese is produced by the artisan dairy Francisco and Sons in Carbajo, a town in the province of Cáceres, Spain. This dairy is a family business that produces artisan cheeses from goat and sheep's milk in a manner that reflects the traditions of their ancestors. Using both ancestral techniques and processes as well as the most up-to-date technologies.
The cured goat cheeses are distinguished by a flavor which is not necessarily strong but surely is intense and lingers in the mouth . In addition to ripening for 4 to 5 months in Iberian lard, this cheese is rubbed with olive oil. When eaten with the rind the cheese acquires very interesting aromatic properties, which are particular to the ripening cellars. Although of course, it is not necessary to eat the cheese with its rind to fully enjoy it.
It is a very versatile, melting cheese with many gastronomic applications.
