The Port of Oncala cheese factory is an artisan company specializing in artisanal cheesemaking sheep, goat and sheep "tortas". They use raw milk from their own livestock which allows them to control all the parameters of the production process and thus make products of very high quality as this new cheese cured without lactose.
Probably the Quesería Oncala port is the only currently producing a cured raw milk lactose-free cheese.
