The Gamonedo is an aged cheese that is made in the Kingdom of Asturias (Spain) from cow and goat milk. Its area of production is limited to the councils of Onís and Cangas de Onís. This cheese has a thin reddish green and blue colored rind, created in the smoking phase. Hard or semi-hard yellowish white cheese has a soft to moist flavor, with a lingering medium strength spicy and acidic part, with touches of hazelnut. It has an odor very characteristic of natural caves, of mold and smoke. Its versatility of use is very wide: from direct consumption along with a good red wine or with cider, as well as a culinary complement in salted cakes or in more flavorful sauces for meats, fish and rice.
