Its spots stand out against the color that is acquired with the passage of time from an aging period of more than 18 months. A cheese to be enjoyed with its irregular pieces that are produced when cut and its strong and characteristic flavor that melts in the mouth. This cheese, along with others from the artisan cheesemaker El Bosqueño have been awarded with the gold medal in the international cheese competition, World Cheese Awards.
The herd of Grazalema Merino sheep has is based in the production of milk for the cheesemaking business. A very strong breed and acclimated to the humidity of the area and the harsh winters provides milk protein and fat which is turned into perfect milk for the production of cheeses that are unique and very flavorful. Its population is registered by the rancher's association of the area and is estimated to have more than 5,000 heads.
