This Grand Reserve, limited production, has attained many distinctions nationally and internationally. A cheese that has been enjoyed by distinguished Chefs from Michelin Star established kitchens such as Ferrán Adrià, Carme Ruscalleda, and Martín Berastegui.
It is made in an artisan way from raw sheep's milk from Spain's Mancha region from their own livestock. It is aged a minimum of 9 months during which the cheese is treated by the dairy's experts and rinsed with olive oil. The rind is natural and formed by the cheese itself.
