An aged cheese produced by the Creamery El Bosqueño. A creamery located in the Cádiz province, located within the Natural Park of Sierra de Grazalema. El Bosqueño produces this cheese with raw milk from Payoya goats, who roam freely in the grazalemeña plains.
It's one of the pioneering artisanal creameries producing exclusive cheeses. Its commercial success has inspired the formation of many new creameries and cheesemakers in the entire gaditana province. It's elaborations are based on traditional Cádiz recipes and continue to produce excellent cheeses.
