Cheese made with raw milk from cow, sheep and goat in the Extremaduran town of Carbajo. It matures from 6 to 9 months and its flavor is intense. The composition of the mixture of the three milks with which this excellent cheese is produced is:
- Milk of cow a minimum of 35%
- Sheep milk at least 30%
- Goat milk a minimum of 20%
You can buy this cheese in wedges of approximately 350 grams.
