Old sheep cheese that is macerated with Pedro Ximénez made by the Valencian cheese factory Granja Rinya, which makes it in its production plant in Ciudad Real. Maceration allows the cheese to acquire the nuances typical of this type of grape. It matures a minimum of 180 days. It is a perfect cheese to pair with wine and its exceptional taste and appearance earned it Gold at the 2018-2019 World Cheese Awards and Silver at the Nantwich Cheese Awards in 2017 and 2018.

This cheese factory started in a small basement in the town of Albal. The family had some cows and sold their milk, but when the price of milk began to drop, the young son suggested making fresh cheese. With his bike, he went to the Central Market of Valencia, where he bought some wooden molds to make cassoleta cheese.
The success was immediate and they soon went from other towns to buy the cheese. Little by little, the demand grew, production expanded and the media began to become more sophisticated until it became a very important cheese factory.
They currently have a herd of more than 400 cows and 4,000 sheep.
