Ahuyentalobos vintage sheep cheese

Navarra cured cheese made in Roncal with raw sheep's milk by the Enaquesa cheese factory. Its bark is treated with a combination of oils that contribute to the formation of a dark ocher-colored bark and aromas reminiscent of humid earth. Said smell of damp earth and fungus are mixed with the very intense dairy aroma. The natural rind surrounds the ivory tone of the pasta that fades inwards, leaving a more subdued yellow color, characteristic of its 8-month maturation. It has a medium flavor, highlights the smoothness in the mouth, with notes of black pepper and, at the same time, slightly acidic.
