The Vellón Fuentesauco cheese is artisanally produced with raw sheep's milk from the Churra and Castilian breeds, a pure native breed of the province of Zamora, which is the basis for a high quality product. It has a genuine aroma and taste, a quality pertaining to raw sheep's milk, and is also well developed and persistent on the palate.
The ripening process takes from 4 to 6 months and it weighs about 1 kilogram. Also, it can be bought in 250 grs wedges.
