Cheese Payoyo, is an artisan cheese factory which was established in 1995. Since its inception have developed their cheeses with milk produced by farmers in their natural region, the foothills of Cadiz and Ronda, and more specifically of three parks: Natural Park Sierra de Grazalema Natural Park Los Alcornocales and Sierra de las Nieves Natural Park, in the Serrania de Ronda, serving the dairy stimulus for the maintenance of the different existing races, some endangered.
Payoyo recover the traditional cheeses of this region, with goat cheese, Sheep and Goat and Sheep Mix.
