The semi-cured Mahon cheese produced with whole cow's milk has a mild, slightly salty and acid flavor with butter-like dairy flavors. Its texture is elastic and its crust has the characteristic orange color of Mahon cheese. It is a cheese that is matured for a minimum period of 60 days.
