In the last part of the route to Santiago, between green landscapes and rolling hills, you will find the regions of Arzúa and La Ulloa, the lands of Arzúa Ulloa and tetilla cheese. Both cheeses protected by their two Certificates of Origin. The Arzúa Ulloa is also known as Ulloa cheese, country cheese, patela cheese or Galician cheese.
The Arzúa Ulloa cheese from Casa Lareiras, with protected designation of origin, is made with milk obtained daily from blond Galician cows and brought to the cheese factory where a traditional production process produces their excellent cheeses.
The Arzúa Ulloa cheese is a soft convex-shaped cheese with an aging period of less than six days and weighing approximately 500 grams.
The final characteristic of Arzúa Ulloa cheese from Casa Lareiras is its yellow color, soft feel and elastic rind. It is presented wrapped in a cotton cloth in order to avoid breaking its fine rind. Its characteristics are apparent even more in the pastry where soft touches of milk and its buttery texture emerge. Whether it is savored alone or accompanied with honey or chutneys it is exquisite to the palate.
