Protected Designation of Origin Manchego semihard cheese made in a traditional manner with raw milk from Manchega sheep that freely graze in the La Mancha countryside. It is aged between 4 and 6 months. It has a very agreeable medium flavor.

“Ojos del Guadiana” started in Daimiel in 1998, a result of the producer's moving desire, extensive livestock, the native breed of sheep and Manchego cheese. In this way a group of farmers united in order to make the best Manchego cheese.
The farmers' sheep graze extensively in the protected environments of the Tablas de Daimiel Natural Park. They make it in a traditional manner, controlling all of the production process.
