Artisanal cheese with raw sheep's milk, rennet curd, and salt. It’s a very creamy cheese that may be consumed by removing the top from above and it's ready to spread. The flavor is gentle but characteristic with great personality. It is served in a vacuum packaging in a special bag designed for maturation which allows the cheese a natural development. La Antigua cheese factory manufactures its cheese with raw sheep milk that allows a very rich aroma, a pure taste and a delicate texture. It’s produced in an exclusively traditional way with the love and care of yesterday. The strict selection of the ingredients, the experience in applying the technological developments regarding production, the dedication of the time required in order to achieve the right maturation, and our daily efforts to improve with the only purpose to offer you high quality sheep cheese. They say that in the past the shepherds worried about their herds of sheep having enough to eat so they could produce high quality milk. They would dedicate themselves body and soul by caring after them, pampering them and protecting them at the point of spending entire nights, out in the fields, by their herds like guardians jealous of their treasure. They did not have any protection besides the stars that sailed the firmament and were the only witnesses of their loneliness and worries. A self-sacrificing profession. Therefore after five generations of shepherds related to their family, they have decided to pay tribute to them with their cheese.
