Swiss alpine cheese, from the Emme Valley and the German-speaking region of Switzerland. It is made with raw milk from cows fed with natural pastures from the Alpine environment. The use of additives is prohibited in the production of this cheese. The average weight of the entire wheel is 100 kg but can reach 120 kg. The aged emmentaler is aged for 20 months, which gives it an exceptional aroma and flavor. Its rind is natural and consistent. The ivory to light yellow paste has significant holes (some with a nectar included). If you like this Swiss specialty, you will enjoy this vintage version of it.
